Chunky Monkey banana bites

Kenny is always asking to eat chocolate now, thank you Valentine's Day.  I decided to try and make a healthier snack/dessert that would still appeal to this new love of "shocklate"

 1 banana sliced into 1/2 inch slices
Freeze banana for 30 minutes to an hour
melt 3/4 cup of chocolate chips and 1 tsp of vegetable oil in the microwave in 30 second increments, until smooth.
Spread a layer of peanut butter on top of banana
Dip banana slice in melted chocolate and place on waxed paper.
Freeze until chocolate is hard.
I made some peanut butter free version for Loralei ( I haven't started her on peanut butter  yet)

Cheeseburger biscuits!

Another new family favorite and it was so easy to make!  Most ingredients came from Aldi.

Cheeseburger biscuits

Ingredients:
1/2 cup Ketchup
1/3 block velveeta cheese
1 lb ground beef (I so recommend buying a cow! The ground beef had NO grease! So much better than store bought!)
2 tbls yellow mustard
1 can biscuits
2 tbls brown sugar
2 tbls Worcestershire sauce ( I used Soy sauce this time because I didn't have worscherstire)

Steps:
1. Preheat oven to 400 degrees
2. Brown the meat on medium/high
3. Mix other ingredients (except biscuits and cheese) in a bowl. 
4. Add sauce to browned meat let summer for a few minutes.
5. Using a muffin tin grease pan and add biscuits to individual muffin circles. I spread them out to try and make little cups out of them.  
6. When meat is done add meat to the biscuits. 
7. Slice cheese into small cubes. Add these cubes to the tops of meat.
8. Bake for 15 minutes!  

I served with mixed veggies and tator tots!!!!  
Loralei loved them and had fun eating them.  Kenny isn't really in to trying new things.  He eventually took a few bites and said it was good, but by then he was done sitting at the table.

Sesame Teriyaki Stir Fry



OMG. This is one of our new favorite recipes!!  This dish was so easy to make and so delicious!!!  Once again, I purchased everything from Aldi and was once again impressed with the quality of food.
Ingredients
1 bag all natural vegetables (Frozen)
6 chicken tenders
1/2 tsp minced garlic
1/4 cup teriyaki sauce

1 pouch of microwave rice (I used chicken flavor)
Seasoning for chicken: (Use as much as you like of the following)
Chili powder 
Salt and pepper

Steps:
1. Thaw chicken and season.
2. Cook chicken on George Forman or skillet.
3. Sauté vegetables and minced garlic on medium high. 
4. Add cooked chicken and sauce on medium low stir.
5. Cook rice pouch and add to skillet.  Stir and serve.

Fiesta Pasta!!

Everything for this meal was bought from Aldi and it was delicious!!!!!  Not the healthiest but you can tweak it to what you want!

Fiesta Pasta

Ingredients
1 package of  Fusilli pasta
1 teaspoon garlic powder
2/3 cup light sour cream
1 pack taco seasoning
1 can diced tomatoes
1 can of mexican corn
1 lb ground beef
Salt and pepper
 3 oz Cream Cheese

Steps:
1. Cook pasta like it says on the box. 
When you drain the water save 1/2 cup of pasta water. Set both aside.
2. Brown the ground beef.
3. Add garlic powder.
4. Drain the tomatoes and corn and add to beef mix.
5. Add taco seasoning and let simmer on low for 3-5 minutes.
6. Combine 1/2 cup pasta water, pasta, and meat together in the pasta pot.
7. Add sour cream, cream cheese, salt and pepper to taste.
8. Mix and let stand for a few minutes.
