Cheesy taco chicken and rice

I love one pot meals!  Between these and my crock pot, cooking dinner can be almost as easy as hitting up the drive thru!  This is one of those, "throw whatever in the pot and it will still taste good" meals.

Ingredients:
6 chicken breasts
1 cup white instant rice
1/2 bag frozen corn
1 can of tomatoes and green chilies
1 can of black beans drained and rinsed
2 cups chicken broth
1 packet of taco seasoning
cilantro
onion powder
garlic powder
cooking oil
Cheddar cheese
Sour cream or plain Greek yogurt

Directions:

  1. Cook chicken in large skillet . Season with onion and garlic powder
  2. Chop chicken and return to skillet.  Push to one side of skillet.
  3. Add small amount of oil to empty side of skillet and add rice.  let the rice start to brown a bit
  4. Stir in beans, corn, chicken broth, taco seasoning, tomatoes, add a pinch of cilantro
  5. cook covered for about 15 minutes or until rice is tender and liquid is absorbed
  6. Add a spoonful of sour cream/Greek yogurt and a handful of cheddar cheese.  
  7. Stir and let cheese melt.
  8. Serve like this or with tortillas

Poor (Wo)man's cottage pie

I am always looking for quick and easy, but somewhat healthy meals that the kids will eat.  Kenny is still super picky and won't eat a vegetable at all, but I keep offering and hopefully that will change.  Loralei still eats whatever you put in front of her and this was no exception.
Here is a quick and easy take on Cottage Pie (Shepard's pie is made with lamb, Cottage pie is beef)

Ingredients:

1/2 bag frozen tater tots
1/2 bag of frozen corn
1/2 bag of frozen green beans  * use whatever frozen veggies you want*
1 can cream of celery soup
1 lb ground beef
1/2 cup of milk
1 cup cheddar cheese

Directions:

  • Preheat oven to 350 degrees
  • brown beef and drain.  I seasoned with minced garlic and onion powder
  • Pour beef into 8x8 pan
  • Mix can of soup and milk in bowl and pour over beef
  • Top beef mixture with frozen veggies
  • top veggies with a layer of cheddar cheese
  • top with tater tot
  • sprinkle a bit more cheese over the top
  • bake in oven for 45 minutes
