Ingredients:
6 chicken breasts
1 cup white instant rice
1/2 bag frozen corn
1 can of tomatoes and green chilies
1 can of black beans drained and rinsed
2 cups chicken broth
1 packet of taco seasoning
cilantro
onion powder
garlic powder
cooking oil
Cheddar cheese
Sour cream or plain Greek yogurt
Directions:
- Cook chicken in large skillet . Season with onion and garlic powder
- Chop chicken and return to skillet. Push to one side of skillet.
- Add small amount of oil to empty side of skillet and add rice. let the rice start to brown a bit
- Stir in beans, corn, chicken broth, taco seasoning, tomatoes, add a pinch of cilantro
- cook covered for about 15 minutes or until rice is tender and liquid is absorbed
- Add a spoonful of sour cream/Greek yogurt and a handful of cheddar cheese.
- Stir and let cheese melt.
- Serve like this or with tortillas
