MMM....


Cajun Chicken pasta (inspired from Red Lobster)
I got this recipe from the Insider's Recipes Master Edition that was emailed to me years ago.


2 boneless skinless chicken breast halves, cut into thin strips
2 teaspoons Cajun seasoning
2 tablespoons butter or 2 tablespoons margarine
1 -2 cup heavy cream
1/4 teaspoon dried basil
1/4 teaspoon lemon-pepper seasoning
1/4 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon pepper
4 ounces linguine, cooked and drained (I used whole wheat which changes the flavor somewhat)
grated Parmesan cheese (optional)

I also added some fresh basil that I had left over and it was a nice touch. I reduced the amount of dried basil that I used.

Directions:Prep Time: 15 mins
Total Time: 45 mins
Place chicken and Cajun seasoning in a bowl or resealable plastic bag, toss or shake to coat.
In a large skillet over medium heat saute chicken in butter until almost tender, about 5-7 minutes.
Reduce heat.
Add cream and seasonings; heat through.
Add linguine and toss; heat through.
Sprinkle with Parmesan cheese if desired.

Luck o' the Irish





Yummy


1 whole Pizza Dough
1 1/2 cup Fresh Basil
3/4 cups Grated Parmesan
1/4 cups Sun-dried Tomatoes Packed In Oil, Julienned
8 ounces,Mozzarella(I used shredded)
8 ounces of Ricotta cheese
1/2 cup of Pesto sauce (I used a pesto/sun dried tomato style but pesto with basil is yummy too)

Roll out pizza dough
Spread Pesto sauce leaving an edge for a crust
Evenly spread Ricotta cheese over sauce.
Spread or sprinkle Mozzarella on top

Bake following instructions for dough.
Spread sun dried tomatoes and basil over the top and bake an additional couple of minutes but don't burn the crust!

"You have pretty Ovaries"

That is what I was told at my appointment on Monday.

Seriously.

I want that on a t-shirt.

I found it funny.

Let's hope those pretty ovaries of mine do what they are supposed to be doing.
