Yum

I have done a post about Oven baked Chimi's before, but these were so much better! Thank you Pinterest!

I tweaked with the recipe a little.

2 pounds of ground beef (because that is what I had frozen)
2 packets of Taco seasoning
2 teaspoons oregano (I use the freeze dried herbs and love them)
2 tablespoons Cilantro
1 Red pepper chopped
1 orange pepper chopped
Dash of onion powder (don't tell my husband. He hates onions!)
1 cup low fat sour cream
1 cup shredded cheddar cheese (I probably used more. Didn't really measure)
6 flour tortillas (burrito size)

Preheat oven to 450 degrees. Brown beef and drain. Add taco seasoning and stir. Reduce liquid to 2/3.

Add oregano, cilantro, peppers. Simmer until the rest of the liquid has evaporated. Remove from heat and let cool 5 minutes. Stir in sour cream and 1/2 cup Cheddar cheese.


Lay tortillas on wax paper and brush both sides with the melted butter. Spoon 1/6 th of filling into center of tortilla and fold like and envelope.

Put tortillas, seam-side down on a non-stick sheet pan. Spaced so they DO NOT touch. Bake 20 -25 minutes or until golden and crisp. Sprinkle with cheese and return to oven to melt. Serve with the garnishes.
